Level 2 sourdough classes are designed for bakers who are ready to move beyond the basics and start making bread, pizza, and bagels with confidence. These classes build on foundational sourdough knowledge and focus on hands-on baking from start to finish.

Rather than starting from scratch, Level 2 classes guide you through the full process of working with naturally leavened doughs. We take the time to look closely at dough behaviour, fermentation timing, hydration, and structure, so you can understand what’s happening and make adjustments as you bake.

Level 2 classes may include:

  • Artisan sourdough bread baking
  • Naturally leavened pizza dough and fermentation timing
  • Bagels and enriched doughs
  • Understanding flavour development and dough structure

Classes in this level are practical, detailed, and taught step by step. There is plenty of time for questions, tasting, and problem solving, all in a clear and supportive learning environment.

If you’ve taken a Level 1 class or have some familiarity with sourdough and are ready to start baking more regularly, Level 2 sourdough classes are the natural next step.
