Learn to Bake Soft Sourdough Burger Buns
Golden, squishy, and rich with flavour, these sourdough buns are made using the Japanese yudane method for a pillowy, moist crumb that stays fresh for days. In this hands-on workshop, you’ll learn how to mix, ferment, and shape buns worthy of a feast. Then we’ll bake, grill, and share a full burger dinner together.
What You’ll Learn:
- The Yudane Method: A traditional Japanese technique where flour is mixed with boiling water to create a soft, tender crumb.
- Working with Enriched Dough: Learn how butter, milk, and sugar affect fermentation and texture.
- Mixing Dough: Develop gluten before incorporating butter, using a stand mixer for strength and consistency.
- Bulk Fermentation: Observe how enriched sourdough develops over time, and understand how to judge when it's ready to shape.
- Shaping for Strength: Shape your own 160g buns to take home and bake the next day.
- Baking & Eating: We’ll bake buns prepared the day before and enjoy them hot with grilled burgers and all the fixings.
Important Note:
This is not a beginner class. You should already be practiced in maintaining your sourdough starter, bulk fermentation, and shaping dough. We will not be covering starter care or sourdough fundamentals in this class.
If you're new to sourdough, we recommend starting with our Bread and Pizza class first.

If you do not eat meat, you're welcome to bring your own non-meat burger, and we’ll provide the bun and the full experience. This class is not suitable for vegans or strict vegetarians.
What You’ll Need After Class:
To recreate this recipe at home, you'll need a stand mixer with a dough hook. The enriched dough requires strong gluten development. A digital kitchen scale is also highly recommended for accuracy.
